Date Bark

This recipe is very adaptable so have fun with it. Here is what we created during the retreat.

Ingredients

  • 1 16oz container pitted medjool dates sliced down the center

  • 2-3 tablespoons Almond Butter- ours contained almonds and salt

  • ⅓ cup chopped walnuts

  • ½ cup dairy free chocolate chips or dark chocolate 

Instructions

  1. Create the date base: Line up dates side by side in a single row on parchment paper or a clean surface. Continue adding rows below until all dates are used. Press and smoosh the dates together firmly to create a cohesive rectangular "bark" that holds together.

  2. Add the almond butter: Using a knife or spatula, spread a thin, even layer of almond butter over the entire date surface.

  3. Add the walnuts: Sprinkle chopped walnuts evenly over the almond butter layer, gently pressing them in so they stick.

  4. Melt the chocolate: In a microwave-safe bowl, heat chocolate in 30-second intervals, stirring between each session until smooth. Alternatively, melt in a small saucepan over low heat, stirring constantly.

  5. Finish with chocolate: Drizzle the melted chocolate over the entire date bark in decorative patterns.

  6. Set and serve: Let sit at room temperature for 15-20 minutes until chocolate hardens, or refrigerate for faster setting. Cut into squares and enjoy!

Storage: Store covered in refrigerator for up to one week.

Other ideas:

  • Try your favorite nut butter

  • Nuts:  almonds, hazelnut, peanuts, 

  • Combinations: peanut butter with chopped peanuts, cashew butter with dried cranberries and walnuts, diced dried pineapple with macadamia nuts.

  • The possibilities are endless!
