Mediterranean Chickpea Salad
Perfect protein-packed option that gets better as it sits:
What you will need:
2 cans chickpeas, mashed slightly
2 Tomatoes-roughly 1 cup, diced
1/2 of a European cucumber, diced
1/2 of a red onion, diced
Fresh herbs (parsley, mint, dill), all of these or just one. About 1/2 cup chopped
Lemon juice from 1 lemon and a dollop of our homemade hummus which can be purchased weekly from Local Foods Plymouth
Instructions:
Combine 8oz of our plain hummus with lemon juice and herbs. Add a pinch of salt and pepper and mix.
Add in chickpeas, cucumber, onion and tomatoes.
Gently mix.
Serving:
Place the chickpea salad on your favorite bread and top with greens and pickles.
Serve your salad with a side of hearty crackers, ones such as Triscuits, Wasa Bread, Mary’s Gone Crackers have minimal ingredients.
