Taco Board

Shake up your Taco Tuesday with a colorful whole food plant-based spread that lets everyone be their own chef!

Load up a big board with seasoned black beans, salsa, greens or shredded purple cabbage, a quick guacamole, bell peppers, and fresh cilantro - then add your favorite tortillas and let everyone build their own masterpiece.

The best part? Everything can be prepped earlier in the day, making dinner a breeze, and any leftover fillings become tomorrow's burrito bowl or tasty salad topper.

What you need:

  • 2 cans of black beans drained and rinsed

  • 1 package of taco seasoning, we used a package from Trader Joe’s

  • 2-3 tomatoes washed and chopped

  • 1 bell pepper washed and sliced

  • Your favorite salsa

  • Greens of choice

  • Your favorite taco shells

  • 3 avocados for guacamole.

    Instructions:

  • Place black beans in skillet on low and add seasoning and water (follow package instructions)

  • Mash 3 avocados on plate, add 1/4 teaspoon salt and 1/4 teaspoon cumin, black pepper to taste. Mix, taste, adjust seasonings.

    • You can also add 1/8-1/4 cup of chopped cilantro if you’d like.

  • Set all ingredients out on your favorite board, in different bowls place: hot beans, salsa, guacamole.
